Paleo Cookie Dough Cupcakes (grain-free, no refined sugar)

I'm *weak* y'all. These cupcakes are moist, fluffy and best of all — stuffed with cookie dough. Careful... these won't last long.
What you need:
Cupcakes
  • 1/2 cup coconut flour
  • 4 eggs
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 2 tablespoons almond milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon apple cider vinegar or lemon juice
  • Pinch salt
  • 1 teaspoon vanilla
Cookie Dough
  • 1/2 cup almond flour
  • 2 tablespoon coconut flour
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • 1/4 cup chocolate chips
  • Pinch salt

Frosting

  • Coconut yogurt
  • Chocolate chips

What to do:

  1. Preheat oven to 325.
  2. Make cookie dough first. Mix all ingredients together, roll into balls and stick in freezer.
  3. Mix all cupcake ingredients together and bake @ 325 for 12 mins. Pull cupcakes out of the oven and stick ball of cookie dough in each cake. Bake for another 4-5 mins. 
  4. Remove cupcakes from oven and let cool. Frost with coconut yogurt (I put it in a ziploc and used as a pseudo-piping bag for pretty swirls, but you can use a knife to frost).
