Mini Cinnamon Roll Donut Muffins (Gluten-Free, Dairy-Free, Nut-Free, School Safe)

It was always a good day when your mom packed Little Bites in your lunchbox (my fave were the chocolate chip ones!!) - and these lil guys are so reminiscent of those mini muffins we were all so obsessed with 🥰 Plus, they're gluten-free & dairy-free!!

 

Here's what you'll need:

✨ ¾ cup granulated sugar

✨ 1 ½ cups gluten-free all-purpose flour

✨ 1 tsp baking powder

✨ ½ cup dairy-free yogurt

✨ 2 eggs

✨ 1 tsp vanilla extract

✨ 10 ½ tsp vegan butter, melted and slightly cooled

✨ ⅓ cup Cinnamon Roll Granola Butter®

✨ 15 tsp dairy-free cream cheese

✨ ½ cup granulated sugar (for the cinnamon sugar coating)

✨ 2 tbsp cinnamon (for the cinnamon sugar coating)

 

Here's what you'll do:

✨ Preheat oven to 350F. Grease a mini muffin tin with non-stick cooking spray; set aside.

✨ In a large bowl, whisk together the sugar, flour, and baking powder until combined.

✨ In a separate medium bowl, whisk together the yogurt, eggs, and vanilla extract. Pour the wet ingredients and melted butter into the dry ingredients, and use a wooden spoon to mix until well combined.

✨ Dollop the Cinnamon Roll Granola Butter® in the batter, and gently swirl it around with a wooden spoon to create a marbled effect.

✨ Place 2 tbsp of the batter into each muffin well. Add 1 tsp of cream cheese into the center of each and then cover with a little bit of batter.

✨ Bake for 10-13 minutes or until golden brown.

✨ Remove from the oven, allow to cool for 5 minutes. Then, remove from the muffin tin and roll in the cinnamon sugar mixture. Top with more Cinnamon Roll Granola Butter® if desired!
