Banana Streusel Coffee Cake (GF & DF) + HINT at New Flavor!

 

Don't know what to make for Sunday brunch this weekend? Look no further 😏 This Banana Streusel Coffee Cake (which happens to be both gluten-free & dairy-free) is the perfect addition to your breakfast lineup AND it hints at our newest flavor, dropping in early May. Any guesses as to what it could be?! 😉

Here's what you'll need:

🍌 2 cups gluten free all-purpose flour

🍌 1 cup granulated sugar

🍌 2 tsp baking soda

🍌 ½ tsp salt

🍌 ⅓ cup melted coconut oil or avocado oil

🍌 2 eggs

🍌 1 tsp vanilla extract

🍌 3 ripe bananas, mashed

🍌 Optional: ½ cup chopped pecans or walnuts

 For the cinnamon swirl:

🍌 2 tbsp granulated sugar

🍌 2 tsp cinnamon

For the streusel:

🍌 ½ cup gluten free all-purpose flour

🍌 ½ cup brown sugar

🍌 1 tsp cinnamon

🍌 4 tbsp vegan butter, cold and sliced into cubes

🍌 2 tbsp Vanilla Granola Butter®

🍌 Optional: ⅓ cup chopped pecans or walnuts

For the maple glaze:

🍌 ½ cup powdered sugar

🍌 2 tbsp maple syrup

🍌 ½ tbsp milk

🍌 1 tsp vanilla extract

 

Here's what you'll do:

🍌 Preheat oven to 350F. Grease and flour a 9-inch round pan or an 8x8” square pan. Set aside.

🍌 In a large bowl, whisk together the flour, sugar, baking soda, and salt.

🍌 Add in the oil, eggs, vanilla, and mashed banana, and stir with a wooden spoon until the batter is smooth. Set aside.

🍌 In a small bowl, whisk together the sugar and cinnamon for the cinnamon swirl.

🍌 Pour half of the banana cake batter into the prepared pan and sprinkle the surface with the cinnamon swirl mixture. Then, top the filling with the remaining banana cake batter and spread to cover completely. Set aside.

🍌 To make the streusel, whisk together the dry ingredients in a medium bowl. Then, using a pastry cutter or two knives, cut the cold butter cubes and Granola Butter® into the dry mixture until small clumps form. Mix in chopped walnuts or pecans if using.

🍌 Use your hands to squeeze the streusel mixture together to incorporate fully.

🍌 Sprinkle the streusel crumbles evenly over the banana cake batter in the pan.

🍌 Bake for 45-55 minutes, or until a knife inserted into the middle comes out clean.

🍌 Whisk together the ingredients for the maple glaze in a small bowl.

🍌 Cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely (if you can wait). Drizzle with maple glaze, then slice & serve. Enjoy!!
