Banana Cinnamon Roll Waffles (Gluten-Free, Dairy-Free)

Eggo who??? These waffles will have you forgetting the toaster version even exists - they're easy, they're delicious, and they're gluten & dairy-free!! 

Here's what you'll need:

🧇 1 banana

🧇 2 eggs

🧇 ¾ tsp baking powder

🧇 ¼ cup gluten free all-purpose flour

🧇 ¼ cup Cinnamon Roll Granola Butter®

🧇 Optional toppings: coconut yogurt, powdered sugar, maple syrup

 

Here's what you'll do:

🧇 In a small bowl, mash the banana. Then, add in the egg and baking powder, and whisk to incorporate.

🧇 Add in the gluten free flour and then whisk until the batter is well combined.

🧇 Preheat your waffle iron. Spoon the Cinnamon Roll Granola Butter® into a small ziploc bag and cut one of the corners off to allow to pipe.

🧇 Using a ¼ cup, scoop the batter into the preheated waffle iron. Then, pipe a ‘cinnamon roll’ design on top of the batter with the Cinnamon Roll Granola Butter®. Cook the waffles until golden brown, about 2-3 minutes. Repeat with the remaining batter and GB.

🧇 Plate the waffles, and top with coconut yogurt, powdered sugar, maple syrup and/or any other toppings if desired :)
